From Kettl

We are excited to share a brand new sencha from the young producer Nakakubo san based in Minami-Yamashiro south of Uji. Made from 100% Yabukita cultivar, Nakakubo san and his family are focused on crafting light steamed sencha that reflects the terroir of the area. The farm, positioned at around 150m on a coveted south-facing slope, enjoys the warmth of the sun for extending period each morning allowing the leaf to absorb nutrients both through the leaf and from the rich soil below.

From a new Kettl order. This shincha is very unique! One of the strangest tasting senchas I’ve had. I like the complexity and novelty.

No sweetness, bitterness, or astringency. Basically no seaweed/umami that I usually get from Japanese greens. But it is still very savory, just in an herbal way. In fact, their tasting notes are pretty spot on.
