Toffee | Dark Cherry | Licorice Root

Grown in the mountains of Nantou, Taiwan, Gui Fei Oolong is made from the Qing Xin cultivar and hand-picked in late summer. Its signature character comes from being bitten by leafhoppers, which triggers natural oxidation and develops the tea’s distinctive honeyed profile.

Partially oxidized and gently rolled, this tea brews a golden amber liquor with a lively, aromatic bouquet. Rich notes of toffee, dark cherry, and licorice root unfold over a smooth, velvety body, offering a balanced combination of warmth, sweetness, and depth.

Deep and warming, Gui Fei is a luxurious and comforting tea with a story to match its flavour. Its natural complexity and lingering finish make it perfect for slow, reflective sipping or sharing in meaningful moments.

Brewing Recommendations:

Western:
3 g | 250 ml | 90-95°C (195-203°F) | 3–4 min

Gongfu:
5-6 g | 100 ml | 90-95°C (195-203°F) | 20–30 sec (1st), +10 sec

Cold Brewing:
5 g | 500 ml | 8 – 24 hours in the refrigerator

Notes:

Western Brewing:
Longer steep times, fewer infusions (1-2).

Gongfu Cha:
Short steeps with multiple infusions (5-8+) Increase steeping time gradually.

Cold Brewing:
Long steep times in the refrigerator, fewer infusions (1-2).

Adjust based on personal taste, water quality and leaf to water ratio.

Gongfu!

Enjoying an afternoon tea session with a new teacup and some tiny little critters who decided to visit me in the park while I was steeping up this sample. A few months ago, a mutual friend introduced me to teatastingjournal while I was traveling for work, and, as tea people tend to be, he was kind enough to share several tea sessions with me. Being away from the routine and comfort of my own tea space, it really made a huge positive impact on that trip. One thing that was very clear was Sam’s love and passion for Taiwanese teas, so I was very excited to hear that he’d opened up his shop front! I’ll definitely be sipping my way through an order of teas over the next few days, starting with this one because gui fei is just such a perfect summer steep, and it’s been a hot moment since I’ve had a really good one.

This is such a beautifully smooth, and naturally sweet tasting oolong with a beautiful progression from gentle, toasted notes of macadamia and golden grains into deep, aromatic, & palate-coating notes of honey, roses, magnolia, and juicy ripe lychee and grilled peach. Really quite heavy on the honey notes, though, which is to be expected with a bug-bitten tea like this one. It’s very grounding while still feeling so full of life.
